In the current study, the effect of adding ethanolic extracts from Artemesia anua, Mentha spicata, and Moringa stenopetale on selected properties of milk during 10 days storage at 4 degC was investigated. Addition of these plant extracts significantly improved the peroxide value and organoleptic attributes of the milk samples. In particular, the alcoholic extract from Moringa stenopetale at the concentration of 15% w/v and 0.075% w/v was found to be the most effective treatment in terms of increasing viscosity and decreasing total microbial count. The antioxidant activity and phenolic and flavonoid content analysis of this extract revealed that it has strong antibacterial and antioxidant properties.
Additionally, a sensory panel was used to determine which of the three extraction techniques best mimicked the aroma of the original strawberry flavored milk sample. The results showed that the MMSE technique provided the most similar aroma. These findings suggest that the methyl vanillin and capric acid extracts from these plants are able to extend the shelf life of milk, while also providing an acceptable taste profile and enhancing organoleptic attributes.
